The thing about making and selling fermented sauces is you have to be organised and planned. Given it takes at least 21 days to make a batch I have to work a month in advance. With this in mind I've been trying to build the stock levels up, ensuring there's plenty in the fridge for the Christmas rush. After they proved so popular last year, this year I'll be offering the Christmas gift set again.
